spicy fish tacos

Welcome!

Today, Kyle, our freckled gourmet and sous chef, Matt are making fish tacos.  Since they love catching Tilapia in our local lake, this is the perfect recipe to start our new adventure in homeschool food blogging.

Fish Tacos

1/2 c. plain non-fat yogurt
1/2 c. mayonnaise
juice of one lime
1/2 tsp. each - oregano, cumin, dill weed, and cayenne pepper
1/4 tsp. of Everglades Seasoning (optional)
shredded green cabbage 3 cups
1 lb of tilapia filets
1 package of  flour tortillas - taco size

Wash and slice cabbage until finely shredded.  Place in medium bowl. In small bowl, combine yogurt and mayonnaise. Mix in all spices.  Add juice from lime.  Pour dressing over cabbage and gently stir until completely coated.  Refrigerate until needed.

Bake fish in oven at 400 degrees, on a cookie sheet sprayed with non-stick cooking spray, until fish flakes with fork. Approximately 14 minutes.

On a plate, layer paper towels with tortillas. Warm in microwave for 45 seconds.

To assemble, place taco on plate. Top with fish, cabbage, and toppings of your choice: tomato, lime wedges, and salsa.

Enjoy!

Everglades Seasoning is used daily in our house.  One of the finest products that Florida has to offer.

Squeezing the limes requires upper body strength.  They have requested a juicer for the next time.

We hope you will give our recipe a try and let us know what you think.

Have a great day.
