nutella sushi

Nutella Sushi

white bread with crusts removed
nutella
jelly of choice

Spread approximately 1 tablespoon of Nutella onto slice of bread. Roll up. Cut into slices.
Continue until you have desired amount of “sushi” rolls.

We recommend flattening bread with a rolling pin or glass before adding Nutella.  We accidentally skipped this step but the still tasted great.

popeye pie

Looking for a way to get your kids to eat spinach?  Here is a family favorite. I am blessed to have a child that likes spinach but even those that don't will like this recipe.

Popeye Pie (aka Spinach Pie)

1 package of frozen spinach
2 tbsp butter
1 tbsp of minced garlic
3 tbsp butter
3 tbsp flour
1 1/2 cup milk
1 1/2 tsp salt
1/2 tsp pepper
1/8 tsp nutmeg
5 eggs
12 oz. mozzarella cheese
1 pie crust, unbaked

Cook spinach and drain completely.  Mix spinach with 2 tbsp melted butter and minced garlic. Let sit.

In saucepan, melt 3 tbsp butter and stir in 3 tbsp flour. Slowly add milk. Heat on low until mixture thickens and starts to bubble.  Stir in salt, pepper and nutmeg.  Beat the eggs and add to mixture.  Stir in cheese and blend until cheese is melted.

Add spinach mixture and blend thoroughly.  Pour into pie crust and bake at 350 degrees for 40 - 45 minutes.  If desired, baste crust with melted butter during last few moments.  This gives the crust a flavor similar to Ritz Crackers.

Enjoy.
